Union Street Market Unveils First Offerings

Union Street Market says the merchants will begin operating when the first phase of the district opens next fall.
Union Street Market is billed as northeast Indiana’s first food hall and public market, plans for which were first announced in May. Developers say the location will ultimately feature 25 merchants, including offerings from local farmers and food entrepreneurs.
“These six merchants reflect exactly what we are seeking: talented local producers of innovative foods and beverages who understand the magic that happens when independent businesses come together in a market setting,” Ted Spitzer, director of planning and development for Union Street Market, said in a news release. “The range of products they represent – from breads and pastries baked in the Market to hand-crafted ciders and kombucha to innovative dining options – exemplify the rapidly developing food scene in Fort Wayne and the blossoming of creative food businesses.”
The first merchants include:
- Bird and Cleaver: A Fort Wayne restaurant owned and operated by the husband-and-wife culinary team of John and Lindsay Cheesebrew, is being reborn at Union Street Market after closing late last year due to the pandemic.
- Good Riddance! Gluten-Free Bakery: With demand for gluten-free baked goods growing rapidly, co-owner Wendy Serban is ready to transition from a home-based business to a fully equipped production kitchen.
- Kekionga Craft Co.: Co-founded by Tyler Butcher and Logan Barger, the new location will offer a dozen hard ciders on tap, plus fresh cider, cider donuts, and other apple snacks.
- Deli on Main: Originating from Ohio, the location will feature breakfast items, smoked meat sandwiches and dinners to go.
- Lunar Infusions: Founded by Sarah Trombley, Lunar Infusions will feature a rotating selection of kombucha on tap, available for flights, growler fills and bottles to go.
- Conjure Coffee: The new location will offer fresh roasted coffees and espresso drinks, as well as a gelato with ingredients sourced from independent small farmers.
