Co-founder Clay Robinson tells Inside INdiana Business the company is investing up to $2.5 million into the 13,000-square foot facility, which is expected to open in the summer of 2019.
The company says the brewery will focus on experimenting with different ingredients, styles and brewing methods to develop distinctive specialty beers. The facility will be able to produce about 5,000 barrels of beer annually.
"Sun King Brewery started in a space about the size of what we are building in Fishers, intent on experimenting with new ingredients and techniques to create what we love – delicious, quality craft beer inspired by all that is Indiana," said Robinson. "And while we’ve grown rapidly over the years, we remain committed to crafting the highest quality beer and are excited to open a new brewery that allows us to get back to our roots and to continue to innovate."
Sun King says the brewery will feature a variety of the company’s core, seasonal and specialty beers, as well as spirits produced by Sun King Spirits in Carmel, which is currently under construction. The facility will have two levels, including a 3,000-square-foot rooftop patio, and will have rental space for private and community events.
The brewery will be located adjacent to the Culinary Accelerator at The Yard. Sun King joins two other recently-announced tenants at $40 million food and entertainment district, 1933 Lounge and Burger Study.
"Sun King’s new specialty brewery will be an exciting addition to the Fishers District," said Fishers Mayor Scott Fadness. "We’re incredibly proud of the collaboration between the City of Fishers and iconic Indiana businesses like Sun King Brewery that are fueling the growth of projects like the Fishers District that will attract residents and visitors, alike."
